Let's wing it. JUJU in Copenhagen just dropped their crispy chicken wing combo, and at this point it is channel tradition: every time JUJU releases something new, we show up. This is Korean fried chicken done with obsessive care on Øster Farimagsgade. We were invited.
JUJU sits on Øster Farimagsgade up in Østerbro, and it has become one of those spots that builds a following by doing one thing at a fanatical level. The concept is simple, Korean fried chicken, but the execution is anything but, and that is exactly why we keep coming back for every new drop.

The wings are marinated, then thoroughly tossed in JUJU’s seasoned flour mix. That is how you get those crispy crevices and crunchy bits, all that texture built right into the coating. They drop into boiling oil for the first fry, rest, then go back in for a second fry, because a double fry is how you get the ultimate crunch. The fries go in at the same time and come out dusted generously with nori and vinegar powder, tossed to coat every single one.

The combo: ten wings, fries, pickled daikon, a dip and a drink. The wings come out with fried peppers and green chili. The best match is the garlic honey soy sauce, garlicky, sweet and tangy all at once. Then the smoked mayo, smoky and creamy, everything you want for both the fries and the chicken. A quick white kimchi and spicy cucumber break, then back in. For the brave, there is the super spicy sauce, the same one from their super spicy sandwich. You know that feeling when it is too hot but you cannot stop eating? That.
