This is a Japanese meal at the highest level, right here in Copenhagen. Welcome to Kinyōbi on Antonigade, which means Friday in Japanese, where every detail from the fish to the interior is done with intention. We were invited, and this one is about obsession.
Kinyōbi is tucked on Antonigade in the city center, and it treats a meal as a full experience rather than a menu. Every ingredient is sourced with the same care, and the room is built to match: quiet, considered, and pointed entirely at the food in front of you.

The wild bluefin tuna comes from Spain, and it does not go straight to your plate. First it rests in a dry-aging fridge for up to two weeks. You know how the best steakhouses dry age their beef? Same principle. The moisture leaves, the flavor intensifies, and the texture becomes something else entirely. From one fish, three completely different experiences: akami, the lean loin, deep and iron-forward; chutoro, the middle belly, rich but with bite; and otoro, the full belly, so fatty it practically dissolves on the tongue. They come plated together, each piece pre-seasoned and perfectly balanced, no soy sauce needed. It would honestly be a shame.

It opens with tuna tartare and caviar on a crispy nori chip, then moves through perfectly grilled wagyu flavored with yuzu and sansho pepper, a crisp fresh salad, and Iberico pork with grilled scallions. Dessert is soft serve with Antonius caviar and olive oil, a luxurious play on salty and sweet, and you close the night with good music and a cocktail.
