What do you do when you get hit by bad luck? You answer back with a temari sushi pop-up. Restaurant Uma on Nørre Farimagsgade had to temporarily close due to unexpected damage, but instead of going quiet, the kitchen adapted. We were invited. Good news first: that chapter is closed and Uma is back to full evening service.
Uma sits on Nørre Farimagsgade in the city center, and this story is really about how a good kitchen responds to a rough hand. Rather than shut down and wait, they pivoted the whole operation into a limited temari sushi pop-up built for takeaway, same precision, new format. These days dinner runs Monday to Saturday from 5pm, until 10pm early in the week and 11pm on Friday and Saturday. Closed Sunday.
Temari is different from what most people expect. Instead of long pieces, it is round sushi: small, hand-formed, visually precise and meant to stand out. Some pieces are topped like nigiri and kept clean and simple, others are lightly filled with salmon, fish and different combinations throughout the box. Every piece is finished individually.
This is where the care shows. Individual toppings, house-made sauces, shiso leaves, flowers and small touches that make every piece distinct. It is a mix of simplicity and depth, some pure, some more complex, all built to the same standard, so opening the box feels like getting a set of tiny, deliberate objects rather than a quick takeaway tray.
Uma is for an evening where the Japanese craft is the point and not the decoration, and the detail we saw in a takeaway box tells you what the kitchen does with a full service. The lesson from the pop-up still stands too: if you care about local places, showing up when things are hard is exactly how they get back on their feet, and the bonus is you eat really good sushi while doing it.
A kitchen that answered back instead of going quiet, and it is back on full time.
