It starts with the naan: fresh dough slapped onto the wall of a blazing-hot tandoor oven, baked until fluffy inside and crisp at the edges, then brushed generously with garlic butter. Then warm basmati and gently simmered butter chicken, finished with toasted almond slivers, fresh coriander and a spoon of cooling coriander chutney. Golden vegetable samosas and soft-inside vegetable momos, served with coriander chutney and sweet, tangy tamarind. And chicken tikka masala, slowly simmered, bold, comforting and built for rice.

Butter chicken rich, warm and comforting. Soft naan torn by hand for a messy bite soaked in sauce. Rice spooned with curry. Juicy momos dipped in tamarind. Crispy samosas, one more dip. Tikka masala, rice and curry, one last bite. All finished with a cool, refreshing mango lassi.
