Gasoline Grill (Carlsberg Byen)

American · Vesterbro

The burger legend George Motz was in Copenhagen, and he brought his legendary Oklahoma-style fried onion smash burger for a two-day pop-up at Gasoline Grill in Carlsberg Byen.

The place

Gasoline Grill is a Copenhagen burger institution, and this was a special one: a two-day pop-up in the Carlsberg Byen location with George Motz, the man who wrote the book on American burgers, running his Oklahoma-style smash. When someone like that lands in town, you drop your plans and go.

How the Oklahoma smash works

It is simple, and the simplicity is the point. A thin ball of beef smashed flat on a hot grill, then the onions, shaved paper-thin and piled right on top while it cooks so they steam down and caramelize straight into the meat. Salt, pepper and searing heat, then two slices of cheese, then straight into a white bun. No sauces, no extras, just beef, onions, cheese and bread. That is it. Two pickles on the side, toss them in or eat them after, because that tang is perfect against all that rich beef and cheese.

Who it is for

This one was a pop-up, so the real takeaway is to watch Gasoline Grill for the next one, and to know that this is a place that pulls in the best. A little taste of burger history, served hot and greasy right here in Copenhagen, and it absolutely backed up the hype.

But now… the real question is… where do we go next?
