Ramen to Bíiru sits in Vesterbro and runs on Tokyo-street energy: craft ramen, cold beer and a rotating monthly special that keeps regulars coming back. It is casual and lively, exactly the kind of room a good bowl of ramen belongs in.

The signature spicy miso: deep flavor, slow-braised pork belly and a soy-marinated egg, with a spice level from 1 to 4. Naturally, we went spicy. Kimchi on the side for that clean, funky brightness that breaks through the heat and keeps everything balanced. Ebi furai shrimp, crunchy, warm and dangerously good with Japanese mayo. And the chicken karaage, crispy outside and tender inside, the definition of a perfect side.

This visit it was the pepper shoyu: green onion, pork belly, soy egg and a chicken broth with a bright, peppery lift. Not spicy, just a clean pepper punch, and we finished every single sip. An ice-cold Mikkeller rice lager to wrap it all up, light and crisp after all that flavor.

Great solo at the counter or with a friend, and the spice scale means everyone finds their bowl, from the heat-shy to the level-4 crowd. Come back monthly and you will always find something new on the specials board.
Ramen to Bíiru is always worth the visit. The only real question is which spice level you are choosing.
