Some of the creamiest cheesecake in Copenhagen, and you cannot walk in and buy it. This is Rubia y Morena on Vesterbrogade in Vesterbro: Madrid-style cheesecake, baked out of one kitchen, sold by pre-order only. You order ahead, you turn up, you carry it home. This visit was sponsored.

The place

There is no dining room here and no counter to queue at. Rubia y Morena is a Madrid cheesecake bakery working out of one kitchen on Vesterbrogade 95E, and everything runs on pre-orders, pickups, catering and the occasional pop up. That is the whole model, and it is why most people who love these cakes heard about them from someone else rather than from a sign on the street.

The style is Spanish. If you know the burnt Basque cheesecake, you know the shape of it: baked hot and fast so the top toasts and cracks, pulled while the middle is still barely set. The difference here is what is underneath. Instead of the usual bare-sided Basque cake, these are built on a sablé base that gives you something to bite against, and the centre is left so loose it behaves more like a cream than a slice. They lean on organic ingredients from Danish producers and small suppliers where they can, and the flavour list shifts with the seasons.

The name is also the house style in two words. Rubia is the blonde one, Morena the dark one. Creaminess, as the bakery puts it, is non negotiable.

What we ate

We worked through three of them cold, straight from the box.

La Clásica first, and it is the one to start with. Three cheeses on that sablé base, brown toasted spots scattered right across the top, and something light and creamy sitting underneath. The centre stays cold, and the whole scoop slides straight onto the spoon. Order this one for people who tell you they do not really like cheesecake.

La Morena next, for the chocolate side of the table. It is made with Valrhona dark chocolate and sets a touch firmer than La Clásica, closer to a chocolate mousse in the mouth without ever stopping being cheesecake. Deep rather than sweet, and the one that holds up best after a big meal.

La Rubia last. Real lemon, real tang. It lands sharp first, then the sugar rolls in behind and softens the whole thing out, with the cream underneath it all. This is the refreshing one, and the one that disappears fastest.

Three very different cakes with one texture running through all of them. There is a dulce de leche version called La Dulce on the menu too, plus seasonal flavours like a mango one in summer, so it is worth asking what is being baked that week.

How to order

This is the part that decides whether you actually get to eat it, because there is no shop to walk into.

Sizes run 100 kr. for a small at three portions, 250 kr. for a medium at ten, and 320 kr. for a big one at fourteen. The large is quietly some of the better value dessert in the city if you are feeding a table. They also take catering, events and pop ups, so it goes well past dessert for four.

Give them a day or two if you can. It is one kitchen.

Who it is for

Anyone bringing dessert to something. A dinner where you did not want to bake, a birthday, a Sunday where a whole cheesecake in the fridge sounds like a good decision. Buy the medium, take it out of the fridge about an hour before you want it, and let the middle come up to the temperature where it turns into cream.
